In a continuing quest to eat healthy, good,
preservative and pesticide free food, I came across
great information about sprouts in this book
that I very highly recommend:
I didn't realize that sprouts are a complete protein, a complete food.
That's really wonderful information for a newbie vegetarian.
A person could actually live on a variety of sprouts and nothing else.
The best part: they are tasty, filling, extremely good for you, and
so simple to grow yourself.
Buy untreated alfalfa seeds to start with. I bought some at
the local health food store - they were in the bulk foods section.
In a large mason jar, put a few tablespoons of the seeds
and enough water to cover completely, and let it set overnight.
Then rinse them each day- in about a week, you've got sprouts!
My mom fixed up the lids to the jars with some screen material
for air flow, and so you can drain out the water each day.
Works perfectly.
Stagger a few jars so that you've got a fresh supply all the time.
You can put the sprouts in your salad, or make them the base of
a salad, add them to a sandwich, put them in your eggs for breakfast,
or just eat them raw. Try sprouts in a
variety of dishes- you'll be surprised how well
they go with just about everything.
They are crisp and fresh and green tasting.
If you're on a diet, sprouts are a must! They fill you up.
